Bordeaux varietal grapes were first planted in Paso Robles in the 60s and 70s and have come to be known as some of California’s best Bordeaux style wines. The climate and growing conditions echo that of the Bordeaux region as do the fabulous wines that are produced here. This 2016 Cabernet from Firestone follows suit in a fruit fantastic medley of black currant and ripe raspberry coupled with notes of cocoa and leather. A bigger wine that is very welcoming and easy to get to know with a country side blend of 77% Cabernet Sauvignon, 11% Merlot, 7% Syrah and 5% Petit Verdot. I smoked sausage over the weekend, and served along with creamy homemade Au Gratin potatoes and a salad packed with veggies. Two thumbs up!
