In Grafton, Vermont the Windham Foundation, a non-profit organization, has been preserving and enhancing the social and economic health of rural communities through the power of cheese.  The foundation supports a number of cooperatives, one being the Grafton Cheese Company who has been making award winning artisanal cheddars for over 50 years.  This week be sure to pick up a piece of their Smoked Maple Cheddar, a New England classic, that is cold smoked over maple and hardwood for four hours.  Mild, buttery flavors with aromas of campfire and a little sweetness that is reminiscent of toasted marshmallow, this cheese is a summer camping trip in a bite. Melt this cheese onto a ham sandwich with mustard, or chop onto a cheese board with smoked meats and dried fruits and be sure to pair it alongside a glass of Pinot Noir or a Porter.  Usually $6.99 per 8oz wedge the Grafton Smoked Maple Cheddar will be on sale this week for $4.99.  Cheers and Bon Appetit!
