I haven’t been drinking Bordeaux in recent months and thought it would be fun to retaste one of my old standards. Cassini Bordeaux is made from 100% Merlot grown along the right bank in the region of St-Émilion. Winemaker, Arnauld Daudier de Cassini is devout in his minimal intervention philosophy when it comes to winemaking. He farms organically, without the use of insecticides or anti-mildew chemicals and harvests all of his fruit by hand. This wine is un-oaked, unfined, unfiltered, and a truly unique value. Without wood influence, the purity and freshness of the fruit is highlighted. Aromas and flavors of clove, plum, raspberry, and cherry are seamlessly intertwined with ripe tannins and bright acidity.
